Hello, hello!

Tonight was a very relaxed night at Lena's place, my cousins girlfriend. It all started around 5ish where we went shopping for food at nofrills and loblaws. It was almost impossible to find Risotto but we finally found it at Loblaws, there was only one box left! So stupid, oh well.

Apparently, Lena is using the same book I used for my thirty days of cooking! She made mushroom risotto yesterady and it was so amazing! I loved it every bit of it. So she ws in charge of the entree and that leaves me to the starter. I made my favrouite "strawberry salad with speck." We couldn't find the cheese we were looking for, so we skipped it and just had the spring salad mix with strawberries. So awesome. =)

Oh my, today was such a hectic day, at first it started out as a nice mellow morning and then BAM! Heavy wet snow. Luckily I got let off early but it still took me an hour to get home! Not cool.

Anyways, I got a new toy yesterday from Costco! =) I didn't get a chance to use it yet because of the stupid weather, I really wanted to try it tonight with fresh fruits but the weather just ruined everything. So it was either this or the magic bullet and we chose this because the magic bullet is just too small.

I guess I'll talk about my career a bit tonight so that you can get to know me better. So far at work I have been working on designing covers for various books and I am currently finishing off an entire book,  designing the interior and exterior! Quite exciting. Oh and my covers are on Amazon.com! =)

Other than that I guess I have been just working out, eating healthy and taking courses from lynda.com. You have to stay on top of your game you know. ;)

This weekend passed by so fast, it was probably because I was having so much fun doing things I wanted to do and spending it with close friends. I guess when you start to wake up early enough in a day, you would start to think that you get more out of it which is entirely true.

On Friday, I had baking class and we baked cream puffs! It was pretty fun, even tho I was really tired and passed out on the train countless times. Saturday, woke up early, balled and then spent the rest of the evening/night with friends; so magical. Then it snowed all of a sudden, felt like it was December. Haha. Sunday was kind of my lazy day but I baked some really nice desserts from this new book that I got. It took me a while to figure out some stuff but the rest was pretty straight forward. =)

I noticed that having to buy food and cook at home really saves me a lot of people. (duh) As I continue to update my spreadsheet, I find that food is still the most popular item that pops up but it's getting less and less. Saving is my new goal. =P

I am excited because it feels like spring is coming! But the weather today sucks, still so cold. I want to make something related to bread tonight, I will come up with an idea later.

A friend shared this with me, I don't know if it will help any of you but I found it very inspirational. =)

did I ever tell you that I love smoothies?

stuffed mushrooms with ricotta and walnuts on toast.

Tonight I made stuffed mushrooms with ricotta and walnuts on toast. The taste was kinda bland and the ricotta was so overwhelming. I don't know why Gordan Ramsay would suggest 350ml of cheese but I did it anyways.

Here's how you make this:

olive oil to drizzle
baby portobello mushrooms
sea salt
pepper
ricotta 350ml
walnuts 60ml
1 oregano sprig
parmesan cheese 30ml
sourdough bread or rye bread

In a bowl, mix together the ricotta, walnuts, oregano, Parmesan and a little seasoning. Pre-heat the oven to 400F, load your mushroom caps and stuffed them with the filling and bake for 10 mins. Then add it to your toasted bread slices and enjoy. =)

On a side note, recently I noticed that a lot of my friends are breaking up and it's saddening because I can't bare to see them go through what I've been through but you know what friends, you can do it! I believe in all of you, when you are at your lowest all you can do is just go up! The best part of a break is when you go through it with friends!

Yesterday, I had a massive dinner party at my house as usual and this time my grandma decided to treat everybody to a nice dinner. She bought all the groceries and he made it at home. I've always loved home cooking and his is always the best. I think I just like home gatherings in general, going out isn't really my thing anymore, well at least not all the time.

So what we have here was:

After a long day and workout, I am tired but here are some pictures. I will update later.


Sonia: Why was the smoothie so thick?! And how come theres no more?!

This was a pomagranate and banana smoothie, one of the best I've made so far. The berry one, I find it has too many seeds and it got a little annoying.

Here's what I added:

3 ripe bananas (freeze for an hour)
1 vanilla bean
30 ml honey
250ml pom juice
500 plain yogurt

Blend until smooth. =) Anyways, try it out guys! =)

I need a blender!!! Argh.
