Late night indulgences

A little update, last night I made raspberry cardamom cobbler and I must admit it is a pretty nice dessert. It looks good, smells good and tastes good. How my sister described it was it tasted like a muffin in a cup. Well, better than a muffin of course. This was from Anna Olson's Sugar book.

500 ml red raspberries
500 ml diced apples
125 ml sugar
25 ml all purpose flour
5 ml caradamom
1 ml cinnamon

500 ml flour
45 ml cornmeal
150 ml sugar
10 ml baking powder
1 ml salt
150 ml unsalt butter
150 ml milk
5 ml lemon zest
5 ml vanilla extract

Baking in coffee cups.
Toss fruit with sugar, (25ml) flour, cardamom and cinnamon and spoon into baking coffee cups.

In a mixing bowl with the paddle attachment combine, flour, cornmeal, sugar, baking powder and salt. Cut in butter until its an even crumbly texture. Blend milk, lemon zest and vanilla and add to pastry. Mix until smooth and spoon dough onto fruit.

Bake for 35 minutes.

One thing I did forget though was to add diced apples, so I had to add it in the end. Blah...
