I am so tired, this weekend I felt a little sick because my coach or someone from my cell group passed the flu to me. But I'm a fighter and it didn't stop me from having a great time with friends and family.

Friday we made dinner rolls, it was very fun and tiring. I almost passed out on the table because I was just so exhausted.

Saturday, I went to watch "No Strings Attached" and then went to a dinner at sushi bong. It was very relaxing and stress relieving. Then we headed back home and had chocolate mousse!

Okay, this is going to be a 2 in 1 post about my adventure as Gordan Ramsay.


Pre-oven


Let's start with the Roasted peaches with vanilla,spice, and honey. Here's how it went down:

4-5 peaches
2 cinnamon sticks
2 star anise
1 vanilla bean, spilt
60ml runny honey
splash of peach liqueur
plain yogurt, to serve

Heat up the oven to 375F and bake for 20 minutes until the peaches are slightly caramelized around the edges. You will know when its done, you can see the edges start to brown. Once you reach that stage, take it out and let it cool down for a while. Place everything on a plate and serve with yogurt. The presentation is up to you but the smell and taste was just so rewarding. It was very, very good. A must try.







And in between, I had dinner with my cell group. I was so happy to see them since I don't see them often enough. We went to Big Mouth Kee at hwy 7 and leslie. Check out some of our photos. =)



I have always been a fan of smoothies ever since I was a kid. I love how healthy they can be and at the same time, I won't feel guilty having seconds. I like my smoothies thick for your information, you know in case you make me smoothies one day. Haha. Here's how you make this beastly drink:

200g raspberries
200g blackberries
90ml plain yogurt
300ml milk
60ml maple syrup

Dump them all in the blender and blend until smooth. Don't let it sit and drink it right away! Personally, I didn't like how there were so many seeds but I loved the flavour and I know it's healthy since I control the ingredients!

This is my new favourite smoothie recipe! Now I must get a blender. Haha. I borrowed tonight's from a friend and I have to return it but don't worry, I will get one.




A very wise person told me this today and it impacted me in a way that I wanted to just get up and do something about it. I hope this would influence you in the same way as well.

Finally I wasn't the one cooking. Today I ate a special home cooked Chinese meal.

Here's what I had:
salt baked chicken wings
egg with shrimp
choy and mushrooms
potato and tomato soup

It sounds much more fancier in Chinese rather than English. =P
The overall taste and presentation was exactly like the ones from a Chinese restaurant and believe me, it tasted just as good as one but of course, without the M.S.G.

I was pretty impressed and satisfied with the food, then again when I do ever complain about food? Haha. Good food and good company, it's the best combination in the world!

I would say the difference between french and chinese cooking would be the taste. I find that chinese food uses a lot of soy sauce and salt and a lot of work with the wok too!

As for french cooking, they use the oven a lot to bake their food. Sometimes it seems like it's way to formal and it just kills the dinner conversations, since everyone is so worried about table manners. But I like it, it's fun and rewarding!

Hello! Long time no talk and see. I just came back from a retreat and it feels great. Sometimes I feel that we all need to step away from technology and just relax with some friends.

Anyways, I haven't been posting a lot lately but I have been working on my own personal cook book. Since I have kept you guys in the dark for the longest time, here is a sample spread that I designed.

The overall concept for the layout is simple, clean and sophisticated. I feel that as a visual communicator, things should be clear and straight forward. Each spread is driven by strong photographs of the actually dish but you are going to have to excuse my current pictures since I do not own a professional camera. The main focus is on the food itself.

Its a working concept / design. If you have any suggestions please let me know! Even though I know I lost most of you guys already during this transition process of cooking on an off.

Work has been so stressful. The good news is, this is a place where I want to be. I've been told that its not always good to be at the top because at the top you have no where else to go. The only way out is down. After I heard that it hit me, hard.

Anyways, I got a new book! Gordan Ramsy. It was pretty cheap, it was only ten dollars hard cover. I can't wait till I go through it.

Wow, I haven't posted for the longest time! But this post will be three posts in one. I will try to cover all everything food related!

Okay here we go.
During baking class we made creme caramel. It was pretty easy and fast. This is one of my favourite desserts by far, since its so rewarding.

First you need to make the caramelized sugar by boiling it till it is amber brown. Then you remove the heat and dispense on your tin cups. Let that sit for a while and make your custard.

Heat up some milk and add any flavour you want. I added cinnamon sticks. Let the flavour infuse with the milk for about 10 mins or so. The longer it sits, the more flavour.

When its about right, break 4 eggs in a bowl. Mix in vannila extract, sugar and whip until you have a good mixture going. Slowly add the milk while mixing. Then pour the filling in the cups and bake for 40 mins.
















Today, I went to Hoof Cafe. This place is known for its food and atmosphere. When we got there, we had to wait for 45mins! But it took us a while to get down there so we waited and chatted for a bit. Soon after 30 mins or so we finally got a table and ordered from the menu. The menu didn't have much and it was on a chalk board which. I ordered the "suckling egg benny" and she ordered the "fried squid sammy." Both of us had no idea what we ordered but I thought the egg benny would be a safe choice for me.

Overall the food was great, it had a nice small town cafe feel to it. It's hard to explain but you have to check it out.

Down the street was this dessert place called Nadege.(sp?) It's a small bakery filled with baked goods. They had sandwiches and coffee / tea. Perfect for a afternoon tea time get together. There were tables for people to sit and enjoy the goods, along with take out. We sat down and pigged out on desserts. =)

So today was valentine's day. A day of love! So why not celebrate? I made fried egg noodles with portabello mushroom. Using the mushroom as a plate for the noodles.

Presentation is everything to me. =)

Here's how it went down.

-Pre heat the oven to 350c
- marinate the mushrooms with olive oil, salt and pepper
- bake for 25 mins

Noodles:
- bring a pot of water to a boil
- cook for 2-3 minutes on high
- add salt

Stir fry
- heat up sliced shallots
- add slice red chilli
- a clove of garlic
- diced ginger
- slice cabbage
- paprika
- water
- soy sauce
- carrots
- tomato paste
- then add the noodles and stir / season accordingly.

Now that you have everything, all you need to do is just build the dish and you are ready to serve. =) To me the noodles was a bit cold because I took so long to arrange the dish. So make sure you serve immediately!
