A little update, last night I made raspberry cardamom cobbler and I must admit it is a pretty nice dessert. It looks good, smells good and tastes good. How my sister described it was it tasted like a muffin in a cup. Well, better than a muffin of course. This was from Anna Olson's Sugar book.

500 ml red raspberries
500 ml diced apples
125 ml sugar
25 ml all purpose flour
5 ml caradamom
1 ml cinnamon

500 ml flour
45 ml cornmeal
150 ml sugar
10 ml baking powder
1 ml salt
150 ml unsalt butter
150 ml milk
5 ml lemon zest
5 ml vanilla extract

Baking in coffee cups.
Toss fruit with sugar, (25ml) flour, cardamom and cinnamon and spoon into baking coffee cups.

In a mixing bowl with the paddle attachment combine, flour, cornmeal, sugar, baking powder and salt. Cut in butter until its an even crumbly texture. Blend milk, lemon zest and vanilla and add to pastry. Mix until smooth and spoon dough onto fruit.

Bake for 35 minutes.

One thing I did forget though was to add diced apples, so I had to add it in the end. Blah...

Hello, hello! Long time no see or talk! I have been working hard and stressing over work so not cool. But anyways on the 23rd I had a dinner party with some of my good friends. As you can see we had some great food and some good times.

Here's what we had:

Salad: Apple and Pecorino Salad (kitchen, best of the best)
What's in it:

2 teaspoons honey
1 teaspoon Dijon mustard
3 tablespoons extra virgin olive oil
2 tablespoons lemon juice
2 pink lady apples cored and sliced(yes they do exist, only at Michael Angelo's)
2 belgian endive leaves rinsed
100 g arugula, stalks removed
85 g shaved Pecorino Cheese

The taste was great but I can never get use to the bitterness of the Arugula leaves. The salad dressing oil was simple but in yet packed with flavour. It is a must try and daniel oliver recommended. =) Even my friend who doesn't eat fruits or veggies loved it. Ask me for the instructions.

Main: Stuffed chicken breasts wrapped in sage and prosciutto
What's in it:

Okay the picture doesn't do justice because it was a bad shot but how it tastes was a different story.

4 large chicken breasts
8 sage leaves
5 tbsp ricotta
sea salt and black pepper
8 prosciutto slices
4 tsp olive oil
handful of thyme sprigs

Prepping this actually takes around 2 hours but I cheated a bit and didn't freeze it for that long. I bet if I did, the chicken would feel more firm and packed. But what was most interesting about this was the intense herb flavours. I love pulling out chicken from the oven and smelling fresh thyme. I find that using prosciutto slices instead of bacon actually lightens this dish up. Bacon is just too much.

The meringue balls. Yes, I know, I know meringue is so boring but you know what?! It's a favourite, and I feel complete ending the meal with a nice natural vanilla whipped cream and fruits. Instead of making a giant cake with lots of egg whites. I used only 3 egg whites and it made 4 very large blobs of meringue. I topped it off with cream and fruits.

I had the weirdest dream last night, I can't seem to pin point what caused me to think that way. But it's only just a dream. Have you guys ever had a dream come true? Not the cheesy line but an actual one. Haha. We will see. Keep you guys posted. =)

Proverbs 12:1

Love hurts, especially when it comes to discipline. Out of his love for you God lets pain come into your life so that you can grow and learn. It's called discipline, and it is done not out of anger or rage but in love and kindness. It's designed to correct you so that you won't fall into disaster again. Discipline is the teacher of the righteous; it teaches you where you have gone astray and remind you how to get back on track. When you only want what's best for your life and your faith, then you won't hate discipline, but you'll look at it as a chance for improvement.

Corrections is like the holy reset button. IT lets you stop and see where you're off track and how to get back on track. The longer you fear or hate correction, the longer you'll be trapped in turmoil of your sin. When you're ready for wisdom and a peace that goes beyond anything you can imagine (see Phil 4:7), accept correction as a wise disciple, and don't run from it like a dumb animal.

Today's dish or dessert was fruit crisp! Now I have never tried this before but it looked very alluring and sweet, so I decided to give it a shot and bake it. I bought all the fruits from chinese supermarkets this time and made sure they were not rotten or dying. The suggested fruits shown in the picture was raspberries, blackberries and some peaches? I forget but I decided to go for strawberries, blackberries, blueberries and peaches.

The initial prep work wasn't all that bad, you just needed to cut the fruits, spread them in a baking pan and mix your dry ingredients together. Then add butter to your dry ingredients and spread the topping evenly on the fruits. Bake for an hour and when its done, dig right in. =)

2 - 3lb of your choice fruit
1 teaspoon ground cinnamon
1 cup of all-purpose flour
1 cup of brown or white sugar
1 teaspoon of nutmeg
125ml of butter, melted

This tastes exactly how I imagined it, crispy, crunchy and sweet. It had a strong flavour of cinnamon (which I love) and a hint of nutmeg.

Hey guys! Sorry I haven't been posting but I was busy with my own personal stuff. Today you guys are in for a treat! It's grandma's birthday and we made a really nice meringue for her. This time I had some help thanks to my cousins.

Instead of making he same old style meringue with one layer. I decided to try it differently and make two layers. I went to no frills today to buy some fruits but they didn't have blue berries, raspberries or blackberries. So I bought strawberries and grapes. Which still works well since they don't have that much juices in them.

The first set of meringue, I screwed up. I baked it at 350F for 40 mins and it burnt. It's suppose to be baked at 300F for 40 mins and then leave it slightly open afterwards for 30 mins.


6 egg whites
1 cup + 5 tablespoon of sugar

Vanilla whip cream:

1 cup plus 2 tablespoons of 35% cream
2 tablespoons of powder sugar
1 vanilla bean

When its done, assemble accordingly. Layer the first layer with cream and fruits, then repeat for the second layer.

Your meringue should be crispy on the outside and gooy and chewy on the inside.

Today was such a nice day, good weather, good food and good company of course! Speaking of which, good food. We went to "Mongkok Restaurant" at Kennedy and hwy7, it was a really nice place packed with people and the good aroma of dim sum. Go to this restaurant if you want a old fashion dim sum cart feel.

What we had:

Chicken feet
curry squid
bbq pork buns (my favourite)
shrimp wrapped dumplings
siu mai (pork)
ginger tripe

And I think that was it. The tea was pretty fresh as well and the service was great. What was even more funny was, we saw Eric Cher from our baking class. He's always fun and dandy.

Anyways, my kitchen is done! Now I just have to clean up a bit and then I will start with the videos again. So don't worry, I will get back on it!

Okay, today was our last class together and honestly I am going to miss you guys. You guys have been so cheerful and positive. Baking with such wonderful people around just takes the class to a whole new level.

On our last day we made strawberry shortcake here's how it went down:

this is for two persons
450 g bread flour
450 g sugar
15 eggs

1lt whip cream
3 pints strawberries
1 lt whipped topping ( if you don't have this you can just use 35% cream)
300 g coating chocolate

The cake itself was quite easy to make and assemble. It just took a lot of time and effort. The sponge was a tad bit hard, I guess it was because we baked it for too long? I don't know but all I know is, I am sick of whipped topping. The strawberries were huge! But they were sweet and they added a nice feature to the cake. (Well it was the main ingredient haha!)

I am going to miss the Friday night classes for sure. I just want to give a quick shout out to all my new found friends! Eric, Scott, Diana, Linda, Dawn, Jen, Julie, Angel, Cossi and Zoe. Maybe in the future we will bump into each other in a different class. =)
