Hello from Toronto! I just got back from the gym and other errands. What a nice day to update my blog, yes, I know I have been way behind on my updates but here I am. =)

Today a was a special day because I used one of my vacation days to relax at home and have some dim sum with the grandma. Then I encountered with a really old friend that I have not spoke with for over 3 years, she came up to me and started conversation with me so we spoke for a bit and departed.

Anyways the other day, well yesterday to be exact, we had a pot luck at work and I got the chance to bake my signature meringue for my co workers. =) I was very excited because they have all been looking at my pictures on facebook and commenting on them. Finally, they can try the "Daniel Oliver Experience."

Here's how it went down:

6 egg whites
1 cup of sugar
1 orange zest

cream:
1 cup 35% cream
1 vanilla bean
60ml powder sugar.

I baked it this time at 300F for one hour and it was a mistake because the meringue was in small blobs. It kinda got burnt, at least the bottom part anyways. Lesson of the day is always look after your meringue.

Next time I would recommend 220F and bake it for one hour. It will come out perfect!

I got lots of good positive feed back from my co workers! They all loved it and I even got a bow from my friend. It feels so good to see people enjoying your food.

I am so sorry for not updating at all. I have been so busy and just out of it. My relatives came from Hong Kong and they haven't been in Toronto for the longest time! And of course, my pinky is still messed up.

Blah who am I kidding, I have just been cheap and lazy. Ya, that pretty much sums it up. Anyways, my relatives requested a daniel oliver experience. So wa la, two infamous dessert for your viewing pleasure.

First, I made meringue with ice-cream and marinated strawberries from 3 chefs.

for the meringue:
egg whites
lemon juice
sugar
vanilla extract


strawberries:
strawberries
sugar
vodka
white wine


I know, I made meringue countless times and its getting so boring but this time was seriously different. When it came out of the oven (baked at 220 for an hour) it looked white and crispy! When I assembled everything and finally got to taste it, it was like a macaroon! What did I do?! Even my sister's boyfriend said it tasted like a macaroon. The other element that made this meringue special was the strawberries. Honestly, I couldn't taste the vodka that much and I didn't add white wine because I didn't have any at all. Oh well next time. This was still a winner though. =)

Second, I made Michael Smith's fruit crisp. ( Both classics )

Fruit Crisp:


3 lb fruits of your choice
( I did raspberries, blue berries, black berries and strawberries )
1 teaspoon cinnamon
1 teaspoon nutmeg
125 ml butter
150 ml flour


Still, the fruit crisp is always a conversation starter. My uncle simon, whom is not a big fan of desserts, was all over this one. It is just an easy fix and I thought of this last minute! You guys have to try this.









Oh how I miss you guys and miss updating my blog for you viewers. Let's see, I think my next project will be a japanese cheesecake. But who knows, its always subjective to change. I'll keep you guys posted and thanks for visiting. =)
